This time of year is always fun because you have bounty of the Autumn harvest and many delicious recipes made with Pumpkin and squashes. I love Pumpkin for its taste as well as the beta carotene that it contains, and all the lovely spices that go with Pumpkin. One of the spices is cinnamon. I have been discussing cinnamon essential oil on the #NSPessentialOilsRoCk Facebook group.
Instead of using cinnamon powder in this Autumn recipe I have chosen to use 1 drop of cinnamon essential oil. I want to explain to you that Cinnamon as an essential oil can be considered as a flavoring for food however I also want to make it clear that is no research to my knowledge on essential oils that prove that they have nutrients in them; they have chemical constituents which can be used in skin care such as massage oils, bath gels, creams, salves etc and in food as a flavoring. They are extracted by steam distillation and they no longer have the nutritional value that you would get from it if you ate the plant itself.
Thus I am using Cinnamon essential oil purely as a flavoring in these Magical Pumpkin Cookie recipe.
Recipe:
Preheat Oven: 350°
Makes 24 more or less Cookie
Dry Ingredients:
1/2 cup Organic pecans
1/2 cup Organic sunflower seeds
2 cups Organic Spelt or OrganicGluten free flour
1 1/2 cups Organic Oats
1 teaspoon Baking Soda
1 teaspoon Organic ginger
Mix flour, oats and baking soda.
Wet ingredients:
1/2 cup Organic Brown Sugar
1/2 cup Organic Sugar
1 cup Organic Butter
Mix thoroughly.
Pumpkin mixture:
1 Organic egg
1 teaspoon vanilla
1 cup Organic canned pumpkin or bake an Organic pumpkin and take out the inside then mash it and use 1 cup of it instead of canned pumpkin.
1 drop Cinnamon essential oil.
Mix Pumpkin, egg and vanilla. then add cinnamon oil. Mix thoroughly.
Mix Pumpkin mixture and wet ingredients. Fold in dry ingredients. Place cookies on cookie sheet that have been lined with baking paper.
Use Pumpkin seeds for decoration to make pumpkin faces and stem on pumpkin cookies.
